In general, one takes on the Minhogim of his father. If he does not have a Jewish father (ie: his father is Avraham Avinu) or if his father was totally secular, he can choose whatever minhog he likes. But the important thing is to follow Jewish Law according to the way it closed at the end of the Sanhedrin.
